Our Story
Born from Fire, Driven by Passion
Every great restaurant begins with a story. Ours starts with a single flame and an unwavering commitment to craft.
The Beginning
EMBER was founded in 2018 by Chef Marcus Hale with a singular vision: to reconnect diners with the primal art of cooking over live fire. Every dish is an expression of flame, smoke, and the earth’s finest seasonal produce.
Our open kitchen sits at the heart of the dining room — a theatre of glowing embers, crackling wood, and meticulous craftsmanship. We partner exclusively with local farms and fisheries, ensuring each plate tells the story of its origin.
What began as a small supper club in East London has grown into one of the city’s most celebrated dining destinations, earning recognition for our commitment to sustainability, flavour, and the transformative power of open-fire cooking.
Philosophy
Fire. Earth. Craft.
We believe cooking over an open flame is the purest form of culinary expression. It demands patience, intuition, and deep respect for ingredients. Our philosophy is simple: source the finest seasonal produce, let fire do the work, and serve each dish with intention and care. No shortcuts. No compromise.
